Monday Message

Try to have plenty on hand to help others as there is great need, you can see the long lines at the food pantries. There is so much need.

We are all getting weary of our life now but give yourself breaks with a book, a soak in the tub, or listen to your favorite YouTube channel - there are many things to learn!

If you will be homeschooling this year there are great places to get info.

If you sew, try to find an area to keep your stuff out, even if it’s just the corner of the dining room, because if it is open and sitting there you can find a way to work on it.

I keep my spinning wheel in the living room. When I’m cooking in the kitchen, I take time to spin while things are baking in the oven.


I try to spin each day, it is soothing to me to do so.

Today, I made eight pints of Kosher dills, I use Mrs. Wages as that is our favorite to eat.

I did two pints of spears and saved seed for next year, the other six pints were pickle slices.

I did a small project that I have been wanting to work on that has to do with odd embroidery threads.


I don't really like to use the peg type clothespins to hang clothes so this was a great way to use them, it makes it super easy to find the color I am needing. I just wrap the floss around the peg. If you needed it for cross stitch you could write the number on the leg, but I am wanting to do items without having to know the number.

Missy thought it very fun to watch me wrap the pins.

Keep finding ways to put up food. I chopped peppers and put them in the freezer and with the jalapeno peppers I froze I might try to make cowboy candy or jelly. 

Canning supplies are hard to come by so you may want to keep a look out for what you are needing. I did a grocery pick up at Walmart to try to keep up with that. I was not able to get lids and they had a limit of two on them but in the end I managed to get them. I noticed a six limit on canned goods and toilet paper has a limit of one.

I want to encourage you to pick up a few extra things when you get groceries even if you only can afford one box of jello, do it to get started. Keep working on your storage. Some of the items I got extra were cat food and litter to stay ahead on those and I also picked up oil and shortening.

I also want to encourage you to pamper yourself sometimes, read a book or learn something new. Find joy even in these hard times, we will make it through - we can do this!!!

  1. I hope things are much better now after the storm. I have thought of you often. Every trip to Aldi we go down the canned goods isle and continue to stock up on cans. With a limit of four it takes patience but it adds up. I have my Aldi list on a post it note on the cupboard door and under it I have more lists for upcoming trips. That way we can list which canned goods to buy for weeks ahead and it has really helped to know what we need to buy for several weeks out.

    I have some questions about pressure canning and I don't know a single person in my area that cans. I just pressured canned some pinto beans for the first time. I did two batches and got 14 quarts. Both times when it was time to open the canner very little water was left. Is that normal? It was not completely dry but barely enough water to cover the bottom of the canner. It is a presto canner and I used the recommended 3 quarts of water. I kept the weight gently rocking. Now I'm scared to do it again for fear I will use up all the water and have a problem. Any thoughts or information would be welcomed.
    Also must I follow a specific recipe to pressure can chili? I would like to can my own but have no idea if that is safe to do and if so how long should chili be processed?
    I hope things are better for you and that your yard and garden have been cleared and cleaned since the awful storm.

    1. It sounds like you need a new gasket did you notice steam coming from the area around lid....gaskets are not expensive usually fifteen dollars or so you can ask at your hardware store tell them make and model you may have to have them order you one. You should have most of the water still there I do back to back sessions and never have to add water ....are you using blue book for your how too on times etc? Or extension service? on the chili you can it for the item that takes the longest like for hamburger if you have that in it beans would be the same time those two items take the longest so you can for those and it is good. Tho the chili will taste a bit different then how you make it on stove but I think it only tastes better good luck.....storm damage clean up is ongoing still counting ourselves lucky tho cause lots still have no power

    2. Thank you Becky. I felt like there should be more water in there but wasn't sure. I have a minor medical procedure coming up this week. But next week I will set up my pressure canner with just water and really watch where the steam is coming from. It is brand new but may need a new gasket anyway. Thank you so much for your help.

  3. I ordered Mrs. Wages kosher seasoning. I've used their bread and butter seasoning. My family likes that.
    I made cowboy candy for the first time this week. Half of the peppers were from the garden, and half were from the freezer (last year's). I think that the frozen peppers made it too watery. Just a note so that you can make adjustments accordingly.
